Grocery List 5-3-09

I think everyone in my house is finally over the stomach bug that’s going around, and yes, I did completely overreact and send everyone to the doctor to make sure we didn’t have swine flu. So it’s time to start getting back on track with meal planning. Here’s the Samster Mommy Menu for this week!

Monday- Baked Salmon Sticks with Lemon Broccoli
One of my baby magazines had an article about how babies should start eating 3 oz of fish a week after 6 mths of age. The DHA is really important for brain development and since a babies’ brain triples in size by the end of the first year it’s a good time for it! (Baby cereals and pre-natal vitamins are also fortified with DHA but I’d like to get Samster used to eating fish anyway)

Dip inch wide strips of Salmon Filet into beaten eggs, then dip into breadcrumb mixture of whole wheat flour, whole wheat breadcrumbs, Parmesan cheese, chopped parsley and a dash of salt. Bake at 375 degrees for 25-20 min. (or until fish flakes easily with a fork) Sam likes lemon so I’ll probably squeeze a little fresh lemon juice before serving

For broccoli simply steam it in a covered glass bowl with about 1/4 in of water, in the microwave for 4-5 minutes. Drain, dress with salt, pepper, dash of garlic powder, a little butter and fresh lemon juice

*UPDATE* This was delic and big hit with the Samster! I also made a dipping sauce for P and I from low fat sour cream, a squeeze a lemon juice, 1 tbs finely chopped parsley, s/p to taste and a sprinkle of garlic powder. YUMMM!

Tuesday – Sweet Pork Slow Cooker Tacos with Lime/Cilantro Slaw. I’ve never made this but boy does it look good! And yes, it does say that you cook the pork with Dr Pepper, go figure.

Wednesday – Stuffed Turkey Burgers with Sweet Potato Fries

For the turkey burgers I buy around 1 1b for 3-4 patties. Season meat with salt, pepper, garlic powder & worstershire sauce (I hate bland burgers so I season pretty heavily) Mix in a bowl with hands. Score the meat into even sections (one for each patty). Working with one section at a time form the meat into a ball and then push down in the center to make a “well”. Fill hole with shredded cheese of choice (I like mont jack for this) and then cover the cheese stuffing by working the meat back around the cheese center. Push down into patty shape being careful not to push out the cheese filling. Cook in a med-hi skillet with a bit of olive oil for around 4-6 minutes per side depending on how thick you made them. YUM!

For the fries simply bake frozen sweet potato fries according to directions and season with salt, pepper, chili powder, brown sugar and a dash a cinnamon after cooked.

Thursday – Marsala Chicken with Sage and Mushrooms (One of my all time favorites)

Lunch- Cranberry Tuna Wraps

Mix drained, canned chunk light tuna with lt mayo, dried chopped cranberries, dash of lemon juice, minced red onion and salt/pepper to taste. Stuff into a wrap along with sliced sharp cheddar cheese, lettuce and tomato.
