Homemade Everything Bagel Steak Sandwich

You should know something before you roll your eyes at the thought of making homemade bagels…

I have never made bread before. EVER.

And I can admit why, I’m ok with saying it, I was scared. I was very scared of yeast. I have to activate it? And let it rise? Whaa? It just sounded too complicated, until I read this post. That picture of her homemade everything bagels (my hands down favorite baked good) looked beyond irresistible & the recipe actually didn’t sound terrifying at all. I was ready to try. Man, oh man am I ever glad I did. I know I make a lot of dramatic statements about how much I love recipes but I really mean it when I say, this was the best tasting dish I HAVE EVER MADE.

The bagels, albeit wonky, were amazing. Hot & toasted on the outside, warm & chewy in the middle . Combine that with a juicy skirt steak & my goodness, it felt so good that I had to ask for forgiveness afterwards.bagel steak sandwich homemade everything bagels

Here’s what I did. In the afternoon while the kids were playing outside I got to work on the dough & used this recipe. While it was rising I put a skirt steak into a ziploc baggie with a couple of cloves of chopped garlic, a few tablespoons of soy sauce, a squeeze of fresh lime & good sprinkle of pepper, garlic powder & a dash of red pepper flakes. I then let that sit in the fridge for the hour or so that the dough was rising.

I took my steak out of the fridge so it could warm up to room temperature & then I cut up a couple of beautiful sweet onions & let them cook over medium low heat in a skillet with a couple tablespoons of butter. Next I boiled the bagels (did you know bagels are boiled first & then baked?? I had no idea. Apparently that’s what gives them that perfectly chewy center) & got them into the oven. Every once in awhile I gave the onions a stir…When the bagels were in their last few minutes I threw the steak into a hot skillet with a good drizzle of olive oil. I seared it for about 3-4 minutes on each side & then let it rest on a cutting board. At this point the bagels were done. I sliced them open & on one half placed a thin slice of havarti cheese (provolone would work well too) & then on the other half a slather of light mayo. Next I sliced up my meat & built the sandwiches with the steak on top of the cheese & then the wonderfully sweet sauteed onions on top of the that. Close it up with the top of the bagel & eat that baby up immediately!

I served mine with an avocado salad (cut up ripe avocado that’s drizzled with extra virgin olive oil & a sprinkle of coarse sea salt) but let’s be honest. Nobody made it to the avocado. We filled our bellies with the warm goodness of the steak sandwich & then rolled ourselves onto the livingroom couch because we were too uncomfortably full yet extremely happy to be moved anywhere else.

Great Finds: Urban Outfitters

Urban Outfitters is one of those stores that’s hit or miss for me. Sometimes I walk through it & think “Ohmygosh this stuff is so hoochie mama-hipster-man, oh man am I getting old!” & other times, like this last trip, I strike gold!UO Collage

That dress is absolutely amazing, perfect for Easter. It’s the softest lightweight jersey & the skirt has a ton of movement. In fact I had the girls with me when I tried it on & they both oo’d & aw’d when I spun around. It’s that kind of dress. The studded crochet top & camo pants look adorable together & I was pleasantly surprised that a pair of pants from there actually fit me. Usually they don’t cater to the ‘I’ve given birth & actually have hips now’ type of figure. The sea salt scented candle & salt water print are perfect finds for my bedroom & that chevron frame was just such steal I couldn’t resist!

I thought I’d throw this up in case you find yourself aimlessly wandering the mall with your very bored spring break children, I’m sure we’ll be there at least once this week!

Let her eat cake!

Of course the big excitement of Susan’s gender reveal party we went to yesterday should be finding out the sex of the baby but there is little in life that brings me as much joy as watching Sophie Monster eat…

Kid Craft: Potato Stamp School of Fish

Potato Stamp School of FishI’ve heard of people making potato stamps before but this was my first time giving it a go…I have to say, crazy easy & the best part, no trip to the craft store. If you already have fabric paint that is, for some reason we always have fabric paint on hand, is that weird?

Anywho, here’s the potato deal…

1) Get a nice fat potato, you’ll have more space to work with.

2) Cut the potato in half lengthwise. I also cut off the rounded edge on the other side so once the stamp was made the kids could set it down without it rolling over & getting paint all over the place. Thinking ahead here people…

3) Carve away! You could make super simple shapes, think a half moon being a ladybug body or rectangles for cars, or go for something with a bit more detail like my little school of fish.

4) Once carved turn your potato over onto a paper towel so the stamp area will be nice & dry. Potatoes are watery little buggers when you first cut them.

5) Have you or your child apply a THIN coat of fabric paint to the stamp area & then stamp away! Try to resist the urge to wiggle the stamp, you’ll just blur the edges. A good firm press is all you need.

6) Once everything is dry set your fabric paint by giving a quick once over with a hot iron. Ta-da! Done!

What can I do? What would you do?

Here’s one of the good things about having an appointment at my Rheumatologist’s office, it’s right next to the mall & since I almost always make appointments when the kid’s are in school I can usually treat myself to a quick, guilt-free, kid-free, pop in. I’m a firm believer that you have to take little moments for just you when you can…right?

My appointment was this past Monday morning & I had only been in the mall a short 15 minutes when I decided that even though it wasn’t even 11a I desperately needed a slice of pizza. The food court was relatively empty, it was still well before the lunch rush, & right after I sat down with my slice of cheese I noticed a group of what appeared to be mentally handicapped adults at the table across from me. There was one man in a wheelchair with his head turned towards the ground, a few women who were quietly sitting at another table & two of who seemed to be caretakers.

My inner voice kicked in & reminded me not to stare & just as I was about to turn my gaze in the other direction the male caretaker called, in a very loud, assertive voice to the woman at the end of the table. He had a thick, island accent so I couldn’t quite make out her name but it sounded like “Annabelle”. For the sake of the story let’s just say it was. “Annabelle” he called, “Get up! Get up! Come here!” The woman looked like she might have Down’s Syndrome & from her grey hair I would guess she was in her 40’s or perhaps even 50’s. She slowly got up from her seat a table down from the man’s & with a downcast gaze walked towards him, once she was in front of him he told her, in the same loud assertive tone, even though she wasn’t more than 2 feet in front of him, “Jump! Jump!” She tried her best but only accomplished a little bounce.

I was taken back by this, did he really just yell at this woman to jump? Perhaps I misunderstood. I must have. His intentions were made quite clear however with his next command, “Dance! Annabelle, dance!” She did an odd bounce & with one hand she waved a beat in the air. He fell onto the table with laughter & reached out with one hand to the female caretaker across from him as if he was looking for her to agree about how hysterical this was. She smiled, shrugged & went back to reading something from a notebook in front of her. He then barked to Annabelle “Sit down! Come on now, sit down!” She slowly walked back to her seat, not once looking even slightly like she had enjoyed this.

You can only imagine my shock at what I had just witnessed. I was horrified, I mean, was I processing this correctly? Had he really just treated her like a circus animal doing tricks for his sick entertainment?? What happened next clarified any confusion I might have had.

He did it again.

Not 30 seconds after she had sat down.

“Annabelle!! Get up! Come on, get up!! Come here!” She looked a little confused, still downcast head, & walked over until she was once again in front of the man. “Dance Annabelle, come on jump!” She tried as hard as she could but her feet didn’t even come close to leaving the floor. He cracked up laughing again. Just then a third caretaker showed up, & the man dismissed her to sit down again.

At this point I was seething mad. I started quickly thinking about what to do. I looked around to see if anyone else had seen this. Maybe someone else would have the same look of both heartbreak & disgust and together we could do something. But no one. A few guys eating their bourbon chicken, another woman snacking on a salad, but no one seemed to be watching the horrible travesty that I had just witnessed.

I stared at the man. This wasn’t the look of death mom stare, this was the I hate you with all of my heart you killed my puppy & you will pay stare. At the very least if he knew someone was watching then maybe he would stop. He met my stare, and held it. To the point where I got a twitch of uneasiness, perhaps even intimidation, & looked away.

I sat there eating my pizza, occasionally looking over & meeting his glance again, trying my best to let him know my utter disdain, but here’s the thing, besides a nasty glare I didn’t know what the heck else to do about it.

There didn’t seem to be anything that would let me know what home or school they were from. I thought about going to up this man & demanding to know where he worked, but one, I doubt he would have told me, it was already quite clearly conveyed that I was NOT happy with him, & two, to be honest, I was kind of scared of him. This was a mean person. A person who had no conscience. It’s not like I was going to tell him how wrong what he had done was & he was going to have some great revelation. I started to think about what if he turned that mean streak towards me? I was all alone. What if he followed me out to my car? Of course these thoughts of mine could be teetering on the verge of paranoid but when you only have a few seconds to decide what to do some crazy stuff can fly through that frazzled little brain of yours.

In the end I left. I felt horrible about it, like I was in high school & had seen a bully torturing another kid & instead of helping had turned away & had gone on to class. It made me sick to my stomach but what else could I have done?

Do you ever watch the John Quinones show “What Would You Do?” In it they have actors play out situations in public & then wait to see what normal everyday people nearby would or wouldn’t do. Once, they had a girl who was clearly beyond intoxicated being picked up by a sleazy guy who was trying to get her back to his hotel room, some standerbys intervened & advocated for the girl who wasn’t able to say no. You get the point. The thing is whenever I’ve watched this show I have always been completely sure that I would be that person to help. I would be the one to stand up & say something. Here I was though, in my own real life “What would you do?” & I did nothing.

I’ve been thinking about this for the last few days & here’s what I’ve come up with, I can be disappointed in myself all day long but that won’t change what’s happened. This poor girl was being mistreated by the person who was entrusted to be taking care of her. I suspect by their apathy this was just a little peak into how they might treat all of their patients. What I can do is try to report this man. I can try to figure out what home had an outing to the mall that morning & just maybe it can be brought to the attention of the facility or perhaps this woman’s loved ones.

So two questions that I hope you’ll answer for me…

1) Honestly, what would you have done?

2) What can I do now? I’ve tried googling to find homes in that area & it’s not so easy to figure out. This happened at Montgomery Mall in Bethesda, MD on Monday morning around 10:45 am. Any ideas??

Leprechaun Ruffled Skirts

Reason #576 you should have a sewing machine…

It’s the night before your kid’s St. Patrick’s Day school party & you completely forgot to get them anything green to wear. Oops.

Thank goodness I happened to have just enough of this pre-ruffled green fabric in my stash to make the girls each a ridiculously quick & easy skirt using this tutorial. Basically you sew a big tube, gather it at the waist with elastic & tada! Your little leprechaun will be not be getting pinched. This fabric isn’t the cheapest but it’s worth it’s weight in gold for how much time it saves you. No hemlines because it doesn’t fray. No sweating over cutting a bazillion strips of fabric to make ruffle covered attire. Love it. I also used it in this post last Spring to make Sophie Monster’s top & Samster’s tank top dress. Cookie Butter Bars

I mean really, let’s break it down nice & simple.

I believe I’ve mentioned Speculoo’s Cookie Butter before…it’s sinfully good. I’d say it tastes like a mix of cookie dough & gingerbread. They sell it seasonally at Trader Joe’s & this year I brinked on the bridge of hoarding it. The thing is you can only eat so many pieces of warm sourdough toast with this jar of indulgence spread on top before your skinny jeans no longer make the word “skinny” come to mind. So instead I baked it into cookie bars…because that’s LOADS healthier.

Oh well, there’s still a good 2 months until bathingsuit season right?

I used this recipe from Butter Me Up, Brooklyn but there are dozens on Pinterest too.

Can someone also please tell me a better way to frost & slice bars? This was my first time making them & my method was a hot mess…IMG_0155

Video tutorial with Sam: Child’s flower bridal veil

What a week people. Seriously, WHAT A WEEK. Sophie missed school Monday because she fell in the shower that morning, had a giant bruise right on her rump & refused to put a diaper on. Can you blame her? Then Wednesday we were supposed to have this massive snowstorm, school was canceled, & the girls & I spent the entire day indoors. I feel bad for saying this, like I should enjoy being in the house all cozy with my kids while a storm brews outside but that warm snuggly stay in your pj’s bonding lasted for about 2 hours. After that, it was BRUTAL. By noon they had done a craft project, played in the snow, eaten nutella stuffed croissants I baked, watched multiple Dora episodes & were still climbing the walls. I kept thinking of the Modern Family episode where Mitchell, after a day home alone with Lily says he, “wants to fill Dora’s backpack with bricks & throw her into the Candy Cane River”

All that to say I had wanted to show you this video days ago but that’s the thing about having a second job/hobby as a blogger, sometimes job #1 of being a mommy calls for overtime. As much as we’d like to we just can’t do it all…at least not all the time.

 Are your kids into getting married yet? Even the boys in Sam’s class talk about it. One even asked, actually he told her, to marry him. Cracks me up. Sophie & Sam are constantly playing wedding at our house, it often ends in a time out for somebody though because Sam insists Sophie be the groom & she’s just not cool with that anymore. Regardless, I knew Sam would be over the moon if I made her a veil. Before this project she was putting a blanket on her head with a headband on top but now that she has a real veil, well, let’s just say it’s being put to good use. Also a funny note, I ate McDonald’s fries at the church in my wedding dress too, I was starving & my uncle ran out to get them, never imagined I’d be seeing this 5 years later, talk about warm fuzzies.

Sam loves this veil even more because she helped make it. I put together a video of the project so you can make one with your child, it’s super easy & something special you can do together…

Here are few more veil details if you need some help…photo

You can see three things in this picture. To help determine the length of the veil I gathered one end of the fabric & held it on top of her head with a headband. The 2nd arrow shows where I cut the fabric & the 3rd arrow shows you one of the many piles of crap crafting supplies I have in my room.

Now here’s the part where I break it down for you sewing virgins. If you’ve ever been too intimidated by a needle & thread to even try than this is your project! Go to your fabric store (Ex: JoAnn’s or Hancock) & ask them to show you the tulle. Buy 1 or 2 yards. You could probably get away with 1 yard for a shorter veil but it’s so cheap you might as well buy 2 & have extra. Use the somewhat inaccurate method I’ve shown above to determine where to cut your fabric. If this were for YOUR wedding day then maybe we’d be more particular but this is for dress-up, in my experience 4 year olds aren’t too fussy about hemlines. They’ll wear something with shreds & rips as long as it has enough glitter. Thread your needle & knot one end. (Google “how to thread a needle” if you need to, ain’t no shame) Run the needle in & out of the fabric all along the end that you want to attach to the headpiece. You can make nice wide stitches, all you’re trying to do is gather the fabric.

After that attach it to the halo by how I demonstrated in the video, just around & through, around & through. Tie a knot in the end & you’ve officially sewn something. YAY FOR YOU!!!

So is anyone going to make this?? I always wonder when I throw these tutorials out into the internet if anyone actually does them.

a week in instagram

Have you ever been in the situation where someone asks how your weekend was & you honestly have no clue what the heck you did? It is seriously a big. fat. blur. That’s how I feel right now writing this post. I see the pictures so I know I was there but honestly you could tell me I traveled to Kathmandu & I’d nod, uh-huh, it was great!

I was up until 1a last night which I’m sure is the reason for the fog, I just don’t do well without sleep anymore. I’m slowly learning how a body with Fibromyalgia works differently than the body I used to have. For the most part the Lyrica & visits with my amazing Rheumatologist are plenty sufficient but this weekend I learned a blaringly loud lesson. DON’T PUSH IT.

I ran my arse off yesterday & when the alarms started ringing in my back & hips I thought mind over matter, be tough, push through, no one ever achieved anything great without a little pain! Dumbass. Around dinner time I noticed my legs were getting weak, to the point where I looked like I had a pimp limp. Then the alarms started. I can best describe Fibro pain as this, picture an alarm clock with it’s buzzer going off…”whah! whah! whah!” Now imagine that sound inside your muscles. That’s kind of like a Fibro flareup. By the time I was in bed though I experienced something that was new to me, even my much anticipated premiere of Amish Mafia couldn’t distract me from the uncontrollable twitches. I remember thinking to myself, am I having a nervous breakdown? Why the heck do I keep twitching? On top of the herky jerky bizarro twitches the aching was palpable. I turned to Ambien around 9:45 & still lay in bed a twitchy, achy, very awake, hot mess until around 1a. I talked to my Dr today & it’s all to be expected so no worries, I just need to be a better listener. Also, I need to do some strength training, apparently that can help a lot with the muscle weakness & spasms. Oh, I also wanted to ask you guys, do any of you have any experience taking Cymbalta? If so what’d you think of it? For those who don’t know it’s anti-depressant/anti-anxiety medication that a lot of people have found greatly helps in controlling Fibromyalgia flareups. My Dr wants me to consider it so I thought why not ask my friends on the internet, surely some of you must have taken it, right?

All that to say, forgive me if some of this sounds scatter-brained, I feel like a shell of a girl today…

*Siblings. Sheesh. Sunday morning I gave the girls a big empty box & the markers tub so they could make a rocket ship. Bad idea. Sam is so passionate about her creative vision & Sophie is such a ‘color outside the lines’ kind of personality that you just cannot put the two of them together on an art project. Poor Sam was a trainwreck when Soph didn’t follow her specific decorative instructions.

*Precious dish towels I ordered from this Etsy shop, P told me they’re not as absorbent as our old dish towels, to which I said, “BUT IT’S A BUNNY WITH A TIARA, HELLO!” At some point I really think he should rethink his priorities.

*Yours truly up before the crack of dawn. If I remember correctly I actually kind of liked it. (I also believe I had gone to bed at 8pm the night before)

Slow Cooked Pork Roast with Apples & Onions

Sometimes I cook a meal that is insanely good. Often it has zero to do with my cooking skills. It’s more that somehow the culinary stars align…I don’t know if it’s the quality of the recipe, the nature of the produce or perhaps that day I didn’t get interrupted every two seconds by somebody who just had to have a cup of milk that very second because they were SOO THIRRRRSSSTTTYYYYY!

This was one of those meals. And you know what pisses me off? The photo sucks.IMG_0463

I wish you could see how sweet & savory the sauce was that I made from the combination of apple juice & pan juices from the slow cooked pork. Or maybe it was the savory & slightly charred taste of the caramelized onions mixed in with the cooked apples. In short, it was divine. But for some reason the picture looks like a plop of slop.

So you’ll just have to trust me, make this sometime this weekend and your family will think you are a superstar.

The recipe is from Pioneer Woman. Has this woman ever made anything I haven’t adored? However here are a few notes after trying it out myself. 1- give yourself 3 hours, if the meat isn’t falling apart with a butter knife it hasn’t been cookin’ long enough. 2- be patient when boiling down the juices to make the sauce at the end, it’s worth it. I had a ton of juice left, this could be because I was chatting with a friend while cooking & failed to measure anything, and it felt like it was forever before it boiled down to a beautiful, silky pan sauce. I almost said screw it, the pork already tastes amazing on it’s own, but trust me my friend, that is the GOOD STUFF. 3- make enough for leftovers, it’s even better the second day. 4- I used half apple juice & half apple cranberry juice, it might have made the end result slightly less sweet. Maybe.

She makes hers with a fancy wild rice, I’m sure that’s wonderful but I just had a box of pearled couscous on hand, rice balls as my girls call them, and that was delicious. I also served mine with brussel sprouts that were quartered, seasoned with salt, pepper & EVOO & then roasted in a 400 degree oven for about 15-20 minutes.

I would imagine this is the perfect rainy day, comfort food, Sunday night dinner kind of meal & I will certainly be making it for all of the aforementioned occasions.
