Mustard Soy Chicken

It happens around once a week. It’ll be 4:30p & I’ll realize that I have no idea what I’m going to feed my family for dinner…look in the fridge, chicken. Plain ol’ chicken. That’s when I always turn to this quick & easy marinade. If you have some fresh fruit slices to throw on top…even better. Honestly, it’s downright delicious and one of my favorites.Marinade your defrosted chicken breasts for at least 15 min in a ziploc baggie with a good squirt of dijon mustard for each breast & 3 or 4 tablespoons of soy sauce.I like to throw ours on the grill but it’s also great in a nice hot skillet. (just be sure to use some olive oil or it’ll stick to the pan like crazy) I covered a few apple slices with a bit of honey and cooked them for around 2 min per side. The sweetness is perfect with the tangy chicken. Serve with your favorite rice or orzo & whatever veggie you have on hand. Quick. Easy. Delicious. My kind of recipe.

    Looks great! Another quick marinade I like for those "What the heck am I going to make for dinner days" is about a tablespoon of honey, 2 tablespoons of soy, a good shake of ground ginger and a squeeze of lemon (if you have it) per chicken breast. It's also terrific on fish.

    I have to tell you, I'm an avid reader of your blog – and last night at 445 my husband called and said that it was going to "take forever" to make the meal I had planned on. So I told him he was welcome to make something else, but I wasn't sure what it would be.

    So, we hung up. I had about 5 min left at work, so I jumped on your blog. This came up – I called my husband right away and we decided to make this last night. 🙂

    It was delish. It was fast, easy clean up and pretty low in fat.

    So thanks for posting this, it came in at the right time 🙂

    Thanks for the post! I love me an easy recipe and ALWAYS have chicken on hand. The other night, I was so busy trying to finish up yet another project before my hubby was due home that I totally forgot about dinner! I had just read this post so I whipped it up using honey dijon (all I had) and soy sauce and MAN was it good! My hubby thought it was fantastic and is ready for it again! The best part is that bc it was so quick and easy, I was able to finish my project and mark something off my never-ending creative list! Thank you!

    Natasha,

    I am not a Mother but rather a 20-something young professional, and I was looking for some quick recipes of what I could make for my new boyfriend after work! I made him this and a good side salad, and he absolutely LOVED it. I was nervous, but it was SO good and SO easy!

    I hope he doesn't expect me to cook for him all the time now…!
