One Pot Dinner: Dirty Turkey Raisin Rice

I know I’ve been posting a lot of recipes lately, I hope you don’t mind. Sometimes I just get in a craft funk & don’t feel like sewing or crafting. Bleh. I think my craft battery just needs to recharge. That & my craft room is a DISASTER so I don’t even want to look in there. You know when the disarray just makes you want to shut the door & put it off until later? Maybe I’ll get someone to watch Sam for a couple of hours this week so I can clean it out…maybe. Anyway, I’m all about ridiculously easy recipes lately & you guys seem to really like them so here’s another one!

My girlfriend Megan taught me this & the whole family just LOVES it. The rice has a small kick but the sweet raisins make it a perfect combo. Add some lean ground turkey and you have a healthy yummy dinner.

-1 box Zatarain’s Red Beans & Rice
-1 package ground turkey
-1 cup raisins

In a large pot brown your ground turkey with a little bit of olive oil. Add rice & follow box instructions. Halfway through rice cooking add raisins. It’s done when it’s still a little saucy & creamy. That’s it! I mean, seriously, other than take-out does it get much easier?

    Made this last night, I had all 3 of the ingredients on hand. Was a little nervous about how the raisins would taste, but it was a perfect compliment.. wish I added more of them!
