Brown Sugar Brie with Green Apples

I first learned about making a baked brie back in college. A sorority sister made it for a little get together, after that I was completely hooked. My roommate & I would make one & eat the entire thing for dinner. (ugh, even thinking about doing that now makes cellulite show up on my thighs. Why didn’t I appreciate my 20-something metabolism, WHY?!) Anywayyy, I still like to make it from time to time for P & I to enjoy as a Friday night treat with a nice glass of red wine. Although nowadays I just look at his glass & salivate a bit…

Start with a round brie, thinly slice off the top, don’t worry if you don’t get every bit of the rind. Sprinkle with brown sugar & bake in a oven-safe dish at 300 degrees until the top is caramelized a bit & the insides are oozy. (If you push on the top with a fork you’ll be able to tell if it’s melted) I serve mine with green apple slices & wheat crackers although raspberries are also yummy & look pretty sprinkled around the plate. Enjoy!

    Oh, sooooo delicious. I don't eat dairy anymore but when I did my mom made an amazing baked brie recipe, where you mix brown sugar and butter, spread on top (then you don't need to cut off the rind), then sprinkled with almond slivers. Aaaaah, so good!

    I am addicted to the baked brie from whole foods that's wrapped in pastry with apples inside. Good lord that's delicious!

    what the hell I LOVE BRIE but with my first and sec pregnancy they told me no brie! so i havent had any even though ive been craving it like a mad man.

    I too had to go through brie withdrawals with my pregnancy. So the first meal I had (hah! MEAL)was brie & sliced apples & baguettes. YUM. Have you ever tried brie with sliced pears? Oh my!

    One last thing… my midwife told me that there are now a number of brie products that are PASTEURIZED! That made me so crabby learning that as I just finished delivering my baby. Anyway – she said Trader Joe's offers a selection of those.

    I love Brie! That looks really good. I will have to try 😉 I made the pizza that you posted two times. The second time I made it with some leftover chicken that we had on the grill the night before. Delicious!!!

    That's my favorite way to have it too. I have never heard not to eat it during pregnancy… I ate everything. My dr. was a dunce.

    Have you tried putting Magno Chutney on top of the cheese and bake it? It´s so goooooooooood 🙂 oh, and with crackers. Something like this: http://www.finger-food-recipes.com/brie-with-chutney.html
    It´s also good to put a bit of coriander + the mango chutney.
    Ohh damn, now I´m hungry again…
