Grocery List 5-26-09

Friday’s Pork & Apple Kabobs

We’re back from vacation which means a completely empty refrigerator, here’s what’s on the menu for this week!

Monday– When it’s this rainy out I just have to make soup, this time some Taco Soup & Cilantro Lime Chicken Salad should meet my cravings! The salad is based on my favorite salad at the Nordstrom Cafe, so YUM!

Salad:
Baby Greens
Corn
Cheddar/Mont Jack Cheese
Tortilla Strips (or crumbled chips)
Avocado (cut into chunks)
Tomato (diced)
Cilantro (roughly torn leaves for garnish)
2 Chicken Breasts (season with s & p, cook on stovetop, remove and let rest 5-10 min, cut into slices, if you’re making the soup too then also cook the chicken for that at the same time)

Dressing:
In blender mix add the following-
1 tbs honey
2 tbs lime juice
3 tbs rice wine vinegar
1 sm garlic clove (minced)

Turn blender on and in a continuous thin stream add 1/3 cu + 1 tbs olive oil, then add 1/3 cu roughly chopped cilantro

Tuesday- Spinach & Brie Chicken with Orzo (I haven’t tried this yet but it looks delish!)

Wednesday- It’s my bday so no way I’m cooking!

Thursday- Avocado/Sauteed Onion Stacked Turkey Burgers
Cook turkey burger patties on stovetop with 1 tbs olive oil (1st season patties with s & p, worstershire sc & garlic powder) around 5-6 min per side depending on thickness. In a separate skillet sautee one med yellow onion (sliced into slivers) with 1 tbs butter or olive oil over med heat until soft & caramelized. Add more butter/olive oil if they start to stick. Top burgers with a slice of mont jack cheese, a bunch of sauteed onions and then a large spoonful of avocado mash. Serve with favorite veggie or oven baked fries.

Avocado Mash- Slice two avocados in half, remove seed. Scoop out insides into bowl, mix with 1/2 tbs lime juice (or more to taste) & coarse salt. Mix roughly until it’s mashed but still chunky. You can also add chopped cilantro if you’d like but with the rest of the turkey burger flavors I like to keep it simple.

Friday- Grilled Pork & Apple Kabobs (This is another one that I haven’t tried yet but I want to test drive it before we have company in town next weekend.)

*Update* The pork and apple kabobs were AMAZING & ridiculously easy, can’t wait to have them again!
