Reader Recipe: Ranch Roast

by Natasha on January 13, 2010 in dinner 101

I just love when you guys send me your favorite recipes, I made this one the other night and the family was so happy with the results that I just had to share. Thanks so much to Christy at Embellished Bayou for sharing!

Slow Cooker Ranch Pork Roast:

1 2.5-3 lb. pork shoulder roast, 1 pck cream cheese, 1 can cream of chicken soup, 1 packet ranch dry salad dressing mix, 1 lb new red-skinned potatoes-halved

Layer potatoes in base of crock-pot. Place meat over potatoes. In a medium bowl, whisk together soup, cream cheese, and salad dressing mix. Spoon over meat and potatoes in crockpot. Cover & cook 9-10 hours on low or 4.5-5 hours on high.

YUM! I served it with a side of steamed broccoli & it was DELISH!

It's official. I definitely need to get a crockpot – that looks SO GOOD!

I just did a similar recipe just last night! I used chicken breasts instead of a roast and italian dressing mix instead of ranch, no potatoes, and served it over rice. So yummy!! My husband told me to write it down in the recipe book.

By the way, I follow your blog and love it! You're so creative. Cute, cute little girl!

I don't eat pork and was thinking I could try it with chicken and then Emily posted her version! Yum. I think I'll have to try it. Chicken and potatoes tomorrow 🙂

So glad you liked it! Next time try it with the dry Italian dressing mix.

Funny story, I just made this last week except I forgot to add the cream cheese. My husband took one bite and said "Did you do something different?" (which is code for "I don't like this very much"). It took me a few minutes to realize I had left out the cream cheese, it really does make it so much better!

Sorry is this sounds stupid, but do you pre-cook the meat first or put it in uncooked? I have a recipe for the slow cooker where it has me cook the meat first, then add to the cooker. I just wanted to clarify before I tried to kill my husband with salmonella and/or e coli poisoning from my lack of throughly cooking meat.

No, no. No need to cook the meat first. I assure you all salmonella &/or other nasty bacteria will be dead & gone after 8 hours in a crock pot! Sometimes recipes will call for you to brown the meat first before putting it in the slow cooker but that's just for flavoring reasons.
