easy spinach artichoke dip

I’m not sure how much national news it’s making but here in D.C. we’ve had a bit of a snowstorm come visit us. (see pics below recipe) The one good thing about being snowed in is I have plenty of time to make yummy treats & get some major crafting done too. Oh, and laundry, dishes, home responsibilities blah blah blah. I just whipped this dip up for a little snack to leave out on the table since the house bound scavengers have started circling. It’s so easy & since it’s superbowl sunday I thought I’d share in case you needed some last minute ideas.
In a small pot heat up 1 pack of frozen chopped spinach with a bit of water (about 2 tbs) over med heat. Stir occasionally until spinach defrosts. Put thawed spinach in a strainer and use a spoon to push out the excess water. Return spinach to pot and add 1 bar of reduced fat cream cheese. Mix & stir until cream cheese melts. Add 1/2 can of artichoke hearts (quartered) & salt and pepper to taste. That’s it! If you want to fancy it up a bit you can put it in an oven safe dish, sprinkle with Parmesan cheese & bake at 350 degrees until the cheese browns & bubbles. Oh, and here’s another tip, instead of regular tortilla chips try the Tostito’s ‘hint of lime’ ones, the tang with the creamy dip is super yummy.

So take a look at this insanity…The Florida girl in me just can’t resist going out & experiencing this stuff. It’s up to my crotch!I don’t think the neighbors will be going anywhere anytime soon.This WAS our patio table & chairs, can you believe we got that much snow in one day?! It’s totally blowing my mind. We’re so close to having the most winter snow ever recorded in DC history! And we have another storm coming on Tuesday night! IN-SAN-I-TY. I can’t wait to show you what I got done yesterday, I sewed Samster the cutest little sweatshirt dress, sweatpants, sweater tunic & I finally finished a collage/painting that I started months ago & had been sorely neglected. It’s amazing what you can get done when you have more than naptime to work with. We’re going to go outside and play now but I’ll post pics later!

    That looks sooo YUMMY! I'm excited to try it. I never buy artichokes and I didn't know they came in a can. I guess I shouldn't be surprised though… everything does.
    I've heard about the snow. There's so much, it's crazy! I have a friend who's husband went to DC for a job interview last week and hasn't been able to fly home. He'll hopefully be able to come back on Tuesday.

    I love it that you said the snow was up to your crotch! So funny! I'm a midwest girl and miss the snow. It's so fun to be dumped on sometimes. Enjoy it!
